Slow Cooker Red Pepper and Ground Turkey Lentils

This dish of Red Pepper and Ground Turkey Lentils cooked in a slow cooker is a hearty and healthy meal that is great for busy days. Ingredients:

  • 1 cup dry green lentils
  • 1 pound ground turkey
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • 1 14
  • 5 ounce can diced tomatoes, undrained
  • 2 cups baby spinach leaves

Instructions:

In a slow cooker, combine lentils, ground turkey, red bell pepper, onion, garlic, cumin, paprika, thyme, salt, black pepper, chicken broth, and diced tomatoes

Cover and cook on low for 6-8 hours or high for 3-4 hours, until lentils are tender

Stir in baby spinach leaves during the last 30 minutes of cooking

Adjust seasoning if needed, then serve hot
