Quinoa Pancakes with Blueberry Maple Syrup
These Quinoa Pancakes with Blueberry Maple Syrup are a tasty and healthy take on regular pancakes. With the blueberry maple syrup, there is a burst of fruity sweetness. The quinoa adds protein and texture. Great for a healthy breakfast
Ingredients:
- 1 cup cooked quinoa
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 cup fresh blueberries
- 1/4 cup pure maple syrup
Instructions:
In a large mixing bowl, combine the cooked quinoa, all-purpose flour, sugar, baking powder, and salt
In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Gently fold in the fresh blueberries
Heat a non-stick skillet or griddle over medium-high heat and lightly grease with butter or oil
Pour 1/4 cup of pancake batter onto the skillet for each pancake
Cook until bubbles form on the surface, then flip and cook the other side until golden brown
While the pancakes are cooking, warm the maple syrup in a small saucepan or microwave
Serve the quinoa pancakes hot with a drizzle of warm blueberry maple syrup on top
