Moist Chocolate Cupcakes with Special Chocolate Frosting
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup hot water
- 1/2 cup unsalted butter
- 1/4 cup heavy cream
- 2 cups semisweet chocolate chips
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
Instructions:
Preheat your oven to 350F 175C and line a cupcake pan with paper liners
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt
Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients
Mix until the batter is smooth and well combined
Stir in the hot water until the batter is thin but well mixed
Fill each cupcake liner about 2/3 full with batter
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and allow them to cool in the pan for 5 minutes
Then, transfer them to a wire rack to cool completely
While the cupcakes are cooling, prepare the special chocolate frosting
In a saucepan, melt the unsalted butter and heavy cream over low heat
Stir in the semisweet chocolate chips until they are completely melted and the mixture is smooth
Remove from heat
Add the powdered sugar and vanilla extract to the chocolate mixture, and stir until the frosting is thick and glossy
Once the cupcakes are completely cooled, frost them generously with the special chocolate frosting
