Kale Lentil and Beef Stew
A hearty and healthy stew made with tender beef, earthy lentils, bright kale, and herbs and vegetables that smell great.
Ingredients:
- 1 lb beef stew meat
- 1 cup dried green lentils
- 4 cups beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 bunch kale, stems removed and leaves torn into pieces
- 1 can 14
- 5 oz diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Warm up the olive oil in a big pot over medium-high heat
It will take about 5 minutes of cooking on all sides after you add the beef stew meat
To make the onion and garlic soft, add them and cook for about 3 minutes
Add the lentils, diced tomatoes, tomato paste, thyme, rosemary, salt, pepper, and beef broth, and mix them in
Bring to a boil, then turn down the heat to low and cover
Simmer for an hour, or until the lentils are cooked and the beef is tender
After you add the kale, let it cook for another 5 minutes or until it wilts
If you need to, change the seasoning
Enjoy while hot
