Dragon Eyeballs Pesto and Olive Deviled Eggs

For a scary Halloween appetizer, these Dragon Eyeballs Pesto and Olive Deviled Eggs are a great choice. Not only are they tasty, but theyre also scary and fun, so everyone at your Halloween party will love them

Ingredients:

  • 6 hard-boiled eggs
  • 3 tablespoons paleo-friendly mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon apple cider vinegar
  • 1/4 teaspoon paprika
  • Salt and black pepper to taste
  • 6 pitted green olives
  • 6 sliced black olives
  • 2 tablespoons paleo-friendly pesto sauce
  • Red food coloring optional
  • Toothpicks

Instructions:

Cut the hard-boiled eggs in half lengthwise and carefully remove the yolks

In a bowl, mash the egg yolks and mix them with paleo-friendly mayonnaise, Dijon mustard, apple cider vinegar, paprika, salt, and black pepper until smooth

Spoon or pipe the yolk mixture back into the egg white halves, creating a smooth surface

For the dragon eyeballs, place a green olive in the center of each deviled egg, cut side up

Insert a sliced black olive into the center of each green olive to create the iris of the dragon eye

You can add a drop of red food coloring to the center for a spooky effect

Using toothpicks, create bloodshot lines around the iris by gently dragging the toothpick through the egg yolk mixture from the center to the edge of the egg white

Drizzle a small amount of paleo-friendly pesto sauce around the dragon eyeballs to give them a spooky appearance

Chill the deviled eggs in the refrigerator for about 30 minutes before serving
