Chicken Marbella Ottolenghi Style
Inspired by the classic Chicken Marbella recipe, this Ottolenghi-style version infuses the chicken with Mediterranean flavors, resulting in tender, succulent meat with a sweet and tangy finish.
Ingredients:
- 4 chicken thighs, bone-in, skin-on
- 4 chicken drumsticks, bone-in, skin-on
- Salt and freshly ground black pepper
- 4 cloves garlic, minced
- 2 tablespoons dried oregano
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1/2 cup pitted prunes
- 1/4 cup green olives
- 1/4 cup capers, with a bit of juice
- 3 bay leaves
- 1/4 cup brown sugar
- 1/2 cup white wine
- 2 tablespoons fresh parsley, chopped, for garnish
Instructions:
Season chicken with salt, pepper, garlic, and oregano in a bowl
Cover and refrigerate overnight
Preheat oven to 180C 350F
In a large baking dish, combine red wine vinegar, olive oil, prunes, olives, capers with juice, and bay leaves
Arrange chicken pieces in the dish, then spoon marinade over them
Sprinkle brown sugar over the chicken
Pour white wine around the chicken
Bake for 45-50 minutes, basting occasionally, until chicken is cooked through and golden brown
Garnish with chopped parsley before serving
