Moroccan Carrot and Quinoa Salad
This bright carrot and quinoa salad will take you to the exotic flavors of Morocco. It tastes great with both sweet and savory foods, and its great as a healthy main dish or side dish.
Ingredients:
- 1 cup quinoa
- 2 cups water
- 4 large carrots, peeled and grated
- 1/2 cup raisins
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped red onion
- 1/4 cup chopped almonds
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Salt and pepper to taste
Instructions:
Rinse quinoa thoroughly under cold water
In a saucepan, combine quinoa and water
Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is cooked and water is absorbed
Fluff with a fork and let it cool
In a large mixing bowl, combine grated carrots, raisins, cilantro, mint, red onion, and chopped almonds
In a small bowl, whisk together olive oil, lemon juice, ground cumin, ground coriander, salt, and pepper to make the dressing
Add the cooked quinoa to the salad bowl, and pour the dressing over it
Toss everything together until well combined
Chill the salad in the refrigerator for about 30 minutes to let the flavors meld
Serve chilled and garnish with additional cilantro and mint if desired
