Fantasy Fish Cakes
For tuna lovers, Fantasy Fish Cakes are a tasty and nutritious low-carb, gluten-free alternative. These crispy tuna cakes are full of flavor from fresh veggies and herbs, and theyre a great Paleo appetizer or main dish.
Ingredients:
- 2 cans of tuna, drained
- 2 eggs
- 1/4 cup almond flour
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped red bell pepper
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, minced
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Coconut oil for frying
Instructions:
In a large mixing bowl, combine drained tuna, almond flour, eggs, red onion, celery, red bell pepper, minced garlic, fresh parsley, lemon zest, salt, and black pepper
Mix well until all ingredients are thoroughly combined
Divide the mixture into 8 equal portions and shape them into patties
Heat a skillet over medium heat and add enough coconut oil to cover the bottom of the pan
Carefully place the tuna cakes in the skillet and cook for about 3-4 minutes on each side, or until they are golden brown and crispy
Remove the fish cakes from the skillet and place them on a paper towel-lined plate to drain any excess oil
Serve hot with your favorite Paleo-friendly dipping sauce or a side salad
