Couscous Salad

A refreshing and Mediterranean-inspired couscous salad thats perfect for a light and healthy meal. This salad is bursting with fresh flavors and makes for a great side dish or standalone meal.

Ingredients:

  • 1 cup couscous
  • 1 1/2 cups boiling water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley leaves, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

Place the couscous in a large bowl

Pour the boiling water over the couscous, cover with a lid or plastic wrap, and let it sit for 5 minutes

Fluff the couscous with a fork to separate the grains

Add the cherry tomatoes, cucumber, red onion, basil, parsley, and feta cheese to the couscous

In a small bowl, whisk together the olive oil and lemon juice

Season with salt and pepper to taste

Drizzle the dressing over the couscous salad and toss to combine

Chill in the refrigerator for at least 30 minutes before serving

Garnish with additional herbs if desired

Serve and enjoy
