Slow Cooker Jambalaya
Slow Cooker Jambalaya is a flavorful and hearty one-pot meal that combines chicken, sausage, rice, and vegetables in a delicious Cajun-spiced tomato broth. Perfect for busy days when you want a comforting and satisfying dinner ready when you walk through the door.
Ingredients:
- 1 lb chicken breasts, diced
- 1 lb smoked sausage, sliced
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 2 cups long grain rice

- 1 cup chicken broth
- 2 teaspoons Cajun seasoning
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- Chopped green onions, for garnish
Instructions:
In a slow cooker, combine diced chicken, sliced sausage, chopped onion, chopped bell pepper, minced garlic, long grain rice, diced tomatoes, chicken broth, Cajun seasoning, thyme, oregano, smoked paprika, cayenne pepper, salt, and pepper
Stir well to combine
Cover and cook on low for 4-6 hours, or until chicken is cooked through and rice is tender
Once done, fluff the jambalaya with a fork and serve hot, garnished with chopped green onions
