Pink Lemonade Cupcakes

Pink Lemonade Cupcakes are a perfect summer treat, combining the refreshing flavors of pink lemonade with the sweetness of cupcakes. Theyre sure to brighten up any occasion with their vibrant color and tangy-sweet taste.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup pink lemonade concentrate
  • 1/4 cup whole milk
  • Zest of 1 lemon
  • 2-3 drops pink food coloring optional
  • 1/2 cup powdered sugar for frosting
  • 2 tbsp pink lemonade concentrate for frosting
  • 1/2 cup unsalted butter, softened for frosting
  • Lemon zest for garnish optional

Instructions:

Warm up the oven to 350F 175C and put paper liners in a cupcake pan

Mix the flour, baking powder, and salt together in a bowl with a whisk

Put away

Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy

One at a time, add the eggs and beat well after each one

Add the lemon zest, food coloring, and pink lemonade concentrate and mix well

Slowly add the dry flour mixture to the wet ingredients, followed by the milk

Start with the dry mixture and end with the milk

Dont mix any further than that

Fill each cupcake liner about two thirds of the way to the top with batter

After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

You can make the frosting while the cupcakes are baking

Mix the powdered sugar, softened butter, and pink lemonade concentrate in a bowl until the mixture is smooth and creamy

Take the cupcakes out of the oven when theyre done and let them cool in the pan for a few minutes

Then, move them to a wire rack to cool completely

Ice the cupcakes with the pink lemonade frosting as soon as they are cool

If you want, add lemon zest as a garnish
