This Low-Carb Bacon and Cheese Vegetable Gratin is a tasty dish that fits the keto diet and is full of flavor. You bake cauliflower, zucchini, and yellow squash with crispy bacon, creamy cheese, and garlic that smells great, and it turns out perfectly. This dish can be a side dish or the main course of a low-carb meal.

Ingredients:

  • 6 slices bacon, chopped
  • 1 head cauliflower, cut into florets
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish optional

Instructions:

Preheat the oven to 375F 190C

In a skillet over medium heat, cook the chopped bacon until crispy

Remove from the skillet and set aside, leaving the bacon drippings in the pan

Add the cauliflower florets to the skillet and cook in the bacon drippings until slightly tender, about 5 minutes

Remove from heat

In a mixing bowl, combine the cooked cauliflower, sliced zucchini, sliced yellow squash, minced garlic, heavy cream, half of the shredded cheddar cheese, and cooked bacon

Season with salt and pepper to taste

Mix well

Transfer the mixture to a baking dish and spread it out evenly

Sprinkle the remaining shredded cheddar cheese over the top of the vegetable mixture

Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the vegetables are tender

Garnish with chopped fresh parsley, if desired, before serving
