Cauliflower Tikka Masala
Cauliflower Tikka Masala is a delicious way to make the traditional Indian dish that is also good for people who are on a low-carb diet.
Ingredients:
- 1 medium head cauliflower, cut into florets
- 1 cup full-fat coconut milk
- 1/2 cup tomato puree
- 2 tablespoons ghee or coconut oil
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt to taste
- Fresh cilantro, chopped for garnish
Instructions:
Preheat oven to 400F 200C
In a bowl, mix coconut milk, tomato puree, grated ginger, minced garlic, ground cumin, ground coriander, turmeric, paprika, cayenne pepper, and salt
Place cauliflower florets on a baking sheet and coat them with half of the prepared sauce
Roast cauliflower in the preheated oven for 20-25 minutes, or until tender and lightly browned
In a skillet, heat ghee or coconut oil over medium heat
Add the remaining sauce to the skillet and cook for 2-3 minutes
Add roasted cauliflower to the skillet and toss to coat with the sauce
Cook for an additional 2-3 minutes, allowing the flavors to meld
Garnish with chopped fresh cilantro before serving
Serve hot and enjoy
