Slow Cooker Mongolian Beef

This Slow Cooker Mongolian Beef recipe delivers tender slices of flank steak in a savory and slightly sweet sauce, perfect for a comforting weeknight dinner.

Ingredients:

  • 1 1/2 lbs flank steak, thinly sliced
  • 1/4 cup cornstarch
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 3/4 cup soy sauce
  • 3/4 cup water
  • 3/4 cup brown sugar, packed
  • 1/2 cup shredded carrots
  • Green onions, sliced for garnish

Instructions:

In a bowl, toss thinly sliced flank steak with cornstarch until evenly coated

Heat olive oil in a skillet over medium-high heat

Add garlic and ginger, saut until fragrant

Add coated flank steak to the skillet and cook until browned on all sides

Transfer steak to a slow cooker

In a separate bowl, mix soy sauce, water, and brown sugar

Pour over the steak in the slow cooker

Add shredded carrots to the slow cooker

Cover and cook on low for 4-5 hours or until beef is tender

Garnish with sliced green onions before serving
