Goat Cheese & Cherry Swirl Ice Cream
Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 4 oz goat cheese, softened
- 1 tsp vanilla extract
- 1 cup cherries, pitted and halved
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
Instructions:
Over medium heat, stir the heavy cream, milk, and sugar in a saucepan until the sugar dissolves
On a different bowl, use a whisk to make soft goat cheese smooth
Mix the warm cream mixture into the goat cheese slowly while whisking it in
Add vanilla extract and stir
Put the mixture in the fridge for at least four hours or overnight
Put the cherries, sugar, and lemon juice in a small saucepan and mix them together
It will take about 5 minutes of cooking over medium heat for the cherries to release their juices and the sugar to dissolve
Take it off the heat and let it cool down
After the ice cream base has been chilled, churn it in an ice cream maker according to the directions that came with it
As the machine is winding down, slowly pour in the cherry mixture in a stream to make swirls
Once the ice cream is smooth, put it in a container that can go in the freezer, cover it, and freeze it until its firm, preferably overnight
