Tuscan Chicken Skillet
Tuscan Chicken Skillet is a tasty one-pan dish made with soft chicken breasts, bright vegetables, and a rich Parmesan sauce. It tastes like the Mediterranean and is great for a quick dinner during the week.
Ingredients:
- 4 chicken breasts, boneless and skinless
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 1 cup spinach leaves
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions:
Season chicken breasts with salt, pepper, oregano, and thyme
Heat olive oil in a large skillet over medium-high heat
Add chicken breasts to the skillet and cook until browned on both sides, about 5-6 minutes per side
Remove chicken from skillet and set aside
In the same skillet, add garlic and onion
Saut until fragrant and onions are translucent
Add bell peppers and cherry tomatoes
Cook until vegetables are tender
Stir in spinach leaves until wilted
Pour in chicken broth and heavy cream
Bring to a simmer
Return chicken breasts to the skillet
Simmer until chicken is cooked through and sauce has thickened, about 8-10 minutes
Sprinkle grated Parmesan cheese over the chicken and sauce
Let it melt for a minute
Garnish with chopped parsley before serving
